Nutrition Students Participate in Workshop with Professional RD

Trocaire’s Nutrition and Dietetics students recently participated in a day-long workshop with local registered dietitian Melinda Yoder, owner of the private practice Balanced Nutrition of WNY.

Yoder shared the professionalism, business and communication skills necessary to own your own nutrition business. In the afternoon, students participated in four hands-on simulation demonstrations that included teaching portion sizes, reading a nutrition label, food and recipe substitutions and a culinary nutrition demonstration. Students enjoyed making the vegetarian wrap, which was quick, easy, tasty and healthy.

Yoder said she sees opportunities for graduates with an associate’s degree in Nutrition in private practice such as developing menus and recipes to fit client’s needs and providing nutrition education to groups in the kitchen and grocery store.

Vegetarian Wrap recipe:

Combine filling :

1 bell pepper chopped

1/2 onion chopped

1 can black beans, rinsed

1 avocado, mashed

3 tablespoons salsa

1 tsp chili powder and cumin

Add to whole wheat wraps along with shredded lettuce and 1/4 cup shredded cheese (per wrap)
